What do you need for this lentil soup?
(for 4-6 people)
200 grams of carrot
250 grams of sweet potato
2 tomatoes
1 onion
2 cloves of garlic
1 tablespoon of olive oil
1 tsp tomato puree
1.5 tbsp Natural Spices Habibi Veggie herbs
175 grams of red lentils
1 vegetable stock cube
Preparation
Peel the carrot and sweet potato. Cut into equal cubes. Also dice the tomato. Chop the onion and finely chop the clove of garlic.
Heat the oil in a large soup pan. Fry the onion and garlic in it for about 2 minutes. Then add the tomato puree and fry briefly.
Add carrot, sweet potato and tomato to the pan along with the Habibi Veggie seasoning. Fry this for 3-4 minutes.
Add 1 litre of water to the pan along with the stock cube. Bring to the boil and simmer for 10 minutes.
Rinse the red lentils in a colander with cold water, then add them to the pan. Then let it cook on medium-high heat for another 15 minutes or so.
Puree the soup with a hand blender. If you prefer the soup a bit thinner, you can add some extra water as desired.
Garnish the soup with fresh parsley and serve with Turkish bread and/or simit, for example.
