Preparation
Preheat your oven to 175°C and grease and flour a cake tin.
In a mixing bowl, beat together the butter and sugar until light and fluffy. Add the egg yolks and keep beating until everything is well blended.
Separate the egg whites from the yolks. Set the egg whites aside and sift the self-rising flour into a separate bowl.
Add the sifted flour to the creamed butter mixture and gently spat it through with a wooden spoon until everything is just mixed. Be careful not to stir too much!
Divide the batter evenly between two bowls. In one of the bowls, whisk your matcha powder Add to taste.
Beat the egg whites until stiff with a whisk.Gently fold the stiffly beaten egg whites through each batter separately. Do this carefully, spoon by spoon, until everything is roughly mixed.
Here comes the fun part! Scoop spoonfuls of both the plain and matcha batter alternately into your greased cake tin. Use a chopstick or knife to gently swirl the batter to create a beautiful marbled effect.
Place your cake in the preheated oven and bake for 1 hour, or until a toothpick inserted in the centre comes out clean.
Once the cake is baked, remove it from the oven and let it cool completely on a wire rack before cutting it. And voila! A beautiful matcha marble cake that is perfect for any occasion.
