6 carrots
6 parsnips
1.2 kg sweet potatoes
2 red onions
3 sprigs of thyme
3 sprigs of rosemary
olive oil
salt and pepper

Preparation

How to make this delicious casserole?

Fire up the Outdoor oven well in advance so that it is at a good temperature.
Peel the carrots, potatoes and parsnips. Cut into pieces about the same size. Cut the onions into 1.5cm rings.
Mix the vegetables and onion rings with the fresh thyme and rosemary. Drizzle generously with olive oil to make sure everything is well coated. Then add salt and pepper to taste and spoon everything together.
Divide evenly between one or two plates and place in the Outdoor oven.
Check after 10-15 minutes and gently stir the vegetables. Roast for another 10-15 minutes until the vegetables are soft.
