How do you make sourdough bread?

Baking sourdough bread is for the people who do like a challenge! In the beginning, it is definitely not easy to make and you will have to experiment a lot with different kinds of flour and amount of water. But once you get the hang of it, you will be able to make the most delicious bread at home!

To make sourdough bread, you need an active sourdough starter. A starter will make your bread rise and make it taste sour. You can make the starter yourself at home.

Sourdough starter

Making a starter requires a lot of patience. It can take about 7 days for it to be active, once it is active you can start baking bread.

All you need is water, rye flour and a glass jar. First, add 50 grams of rye flour and 50 grams of water in a jar and stir well.
The next day, use 50 grams of your starter and add 50 grams of rye flour and 50 grams of water again.
Repeat this process until your starter doubles in size. All ingredients remain in 1:1:1 ratio.

The starter is active and ready to use when it has doubled in size. Make sure the starter is in a warm place, it will grow faster and better.

Ingredients:

500 g wheat flour
350 g lukewarm water
100 g sourdough starter
12 grams of salt
Large bowl
Rice basket
Baking paper

Add all ingredients in a large bowl and knead well. Then let it rest for 30 minutes.
Now it's time for the stretch & fold technique. Grab the bowl of dough and wet your hand a little. You pick up the dough from the other side and fold it to the centre. You do this on all sides. Be careful not to tear the dough. Then let it rest for another 30 minutes.
Repeat the top step two more times and then let it rest for four hours.
Dust the work surface with a little flour so that we can start shaping the dough. Flatten the dough and fold the corners together to make a round ball.
Place the dough in a rice basket and let it rest for at least 30 minutes. You can also put it in the fridge overnight, so you can bake your bread right away in the morning.
Heat the oven to 250 °C with the Dutch Oven in it, so that it reaches the same temperature as the oven. This takes at least 30 minutes.
Remove the bread from the rice basket and then place it on a baking sheet. And cut a slice in the bread of about 0.5 cm.
Remove the pan from the oven and place the bread in the pan. Put the lid back on and leave it in the oven for 25 minutes. Remove the lid from the pan and let the bread bake for another 20 minutes.
Yes, the bread is ready, let it cool for one more hour before slicing.
